Easy Overnight Oats Recipe – Banana & Strawberry

Soooo, I used to hate oatmeal. Like, with a passion. It was more so like, a texture thing — you know what I mean? It wasn’t so much the actual taste, but the texture of it all — which is the same way I feel about yogurt, puddings, jello and such. But then shortly after I turned 30, I was diagnosed with borderline high cholesterol, so I knew I had to change my eating habits immediately.

But eating oatmeal though? Ugh.

What are the health benefits of eating oatmeal?

Oatmeal is one of the many power foods that helps stabilize cholesterol and blood glucose levels. Since diabetes runs in my family, I thought it was time I got over myself and added it into my diet regularly. But how could I accomplish this without cringing with every bite?! Argh.

Somehow, while searching for something semi-tasty involving oatmeal,  I stumbled upon overnight oats. And let me tell you, this discovery has been life changing! It’s super quick and easy to prepare at the beginning of the week, and you can literally eat it every morning.

Ayeeeee, let’s hear it for small victories!

My first overnight oats experiment was Banana & Strawberry. I’m typically a huge banana fan (I literally try to incorporate it into every damn thing), so I thought I’d start with this recipe.

Wanna give it a shot? Check out the recipe below I grabbed from Wholefully, with a few tweaks of course!

How To Make Overnight Oats

  • 1/2 cup of rolled oats
  • 1/3 cup sliced banana
  • 1/3 cup sliced strawberries
  • 2/3 cups of milk of choice (I used almond milk)
  • 0 -2 tablespoon honey or maple syrup (use per your preference)
  • Pinch of salt
  • 1/3 cup of plain greek yogurt
  • 1/2 teaspoon of vanilla extract
  1. Throw all of the above in a bowl and whisk.
  2. Transfer mixture to a closed container and refrigerate for at least 4 hours. I did mine overnight and it turned out just fine!
  3. Dassit. Eat.

So that’s it, basically! When you wake up in the morning, your overnight oats will be good to go. I read where you can prepare a bigger batch to last at least 5 days, for a quick breakfast for every day of the week.
